Simply means, “alla vodka” means “made with vodka.” Crushed with tomatoes, heavy cream, vodka, and penne are the classic ingredients in pasta alla vodka, which rose to fame in the 1980s. Some people like to include peas and pancetta. Feel free to cook the pancetta with the onions first before adding the tomato puree to the skillet.
